450g Small New Potatoes ( Salad Pots or Jersey’s)
1 Bunch Watercress( buy a packet washed and ready to use)
200g Cherry Tomatoes ( Grow your own!!) – halved
125g Feta – cubed
2 Tbsp Pumpkin Seeds
3 Tbsp Low Fat Fromage Frais
1 Tbsp Cider Vinegar
1 Tsp Soft Brown Sugar
Salt & Paprika
- Cook the Potatoes in lightly salted water until soft, drain and leave to cool
- Toss together the Potatoes, Tomatoes and Watercress
- Shake together the Fromage Frais, Vinegar, Sugar, Salt and Paprika and pour over the Salad just before serving.
